Mind over taste

Our culinary experience improved drastically since we found a new wok sauce with Teriyaki and sesame oil. I was fine with our old wok recipe, but with the addition of the new sauce it has become one of my favourite dishes. I just shouldn't have read the ingredients of the sauce.

While never diagnosed I'm pretty sure I'm trehalose intolerant. Every time I've eaten mushrooms I've suffered from it. Due to the symptoms even the thought of mushrooms can make me feel nauseous.

We made wok again this weekend and I got curious: what's in the sauce? Well, turns out among other things it has mushroom oil in it!

Rationally the just the oil from mushrooms shouldn't include any sugar ( that's what the trehalose is, mushroom sugar), so it shouldn't cause any symptoms from being intolerant to it. I've also had a first hand experience from not having any symptoms as I've eaten the same food many times before. I have also eaten mushrooms without knowing and suffered the consequences.

Knowing all this I had hard time at first getting that wok down my throat. Just knowing there is something from mushrooms made my favourite food repulsive. I had to make a conscious effort to overcome that instinctive feeling. I had already changed my mind once on that matte by just learning what's in the dish, I was sure I can make the same thing again. And bite by bite I told myself there is nothing wrong with it. And soon, it was as delicious as ever.
